Black Ivory Coffee is among the rarest coffees in the world. Harvested in Surin, Thailand it undergoes a unique natural refinement process, involving elephants. Carefully selected Thai Arabica coffee cherries are offered to the elephants as a seasonal treat alongside their regular diet. As the elephants enjoy the cherries, a gentle natural fermentation begins to transform the coffee. This process helps reduce the compounds that can create bitterness during roasting, revealing an exceptionally smooth and complex cup. After the cherries are naturally processed, the beans are carefully collected, washed, sun-dried, and roasted in small quantities to preserve their distinctive character. The resulting coffee is prized for its refined flavour profile, often revealing notes of cacao, date, plum, tamarind, and subtle pu-erh tea undertones, with a remarkably smooth finish and very little bitterness. The process is remarkably inefficient. From roughly 33 kilograms of coffee cherries, only about one kilogram of finished coffee is ultimately recovered contributing to its extraordinary rarity. Beyond its flavour and scarcity, Black Ivory Coffee supports elephant-caring families in rural Thailand. By connecting the well-being of elephants with sustainable income for their caretakers, the program helps provide care for elephants that are elderly, injured or unable to work in tourism.
